*rolls around on the floor and cries* Nooooo no more Easter Bunny! NOOOOO!
Graver's been torturing me with that damn rabbit for years :_( Although
that video is eerily how I picture it....
That said, I think I'd have to go with either the commercial interpretation,
or the sad reminder of lost innocence. In the conscious mind of a
post-modern society, I doubt the Easter Bunny means anything more than, "oh,
hey, it's Easter," but subconsciously it could have all kind of interesting
connotations.
Bah, now I'm just babbling.

More seriously, the symbolism seems to represent comercialism to many
people... as the symbology of a rabbit laying eggs for zombie jebus
seems lost, it's presumed corporations use the symbology for candy
sales.
