I doubt that's true, although it's something you read a lot. The Easter 
Bunny doesn't appear as a symbol until long after the conversion. Indeed, 
if we're talking about England (which is where Bede says there was an 
"Eostre,") then rabbits aren't introduced, IIRC, until around the 11th 
century.

The Easter-bunny link is probably no more specific than the general 
association with springtime.
