I think this is fairly common.  After my first liver transplant, when I
was twelve, I was taken down to the hospital lab or morgue or whatever,
and was able to see my old liver.  It was swollen, sliced in half for
study, and green.  We took polaroids of it, and joked about using the
pictures for Christmas cards.  I may still have them somewhere....

I was told that the Pittsburgh Children's Hospital (where I had my first
two transplants done) kept all organs they removed from transplant
patients.  I guess any patient that wanted to keep their old bits could
break in and get them.  I don't know about the policies of other
hospitals, but if it suits your campaign, I don't see why they couldn't do
the same.
