I think that almost certainly there were older alternative forms of dipsomancy, but that they were related to the modern version as Oneiromancy's ancient and modern forms are: similar domain, different methods and effects.  

IMO, the view of alcohol presented is very much post-Prohibition, and so the school's current form couldn't have existed more than for a few decades as it currently is.

Perhaps higher level channels involve receiving a big bonus for almost any act, as long as the avatar's unobserved.  Lasting effects last until someone would notice them, then disappear.
