Couple reasons:
1. He has a sense of humor, rather than just a collection of wisecracks.
For a concrete example of the latter, see his Robin Hood in MiT.
2. He gets hurt. Often. And he gets outfoxed occasionally.
3. In following the course of love, he places his trust in something other
than his own abilities.
4. Through the backstory, we know that he's not the first Man In Black, and
won't be the last - Wesley will lose, eventually, to the course of time.
That makes him sympathetic.
