To clarify, I'm not insisting that you'll get BADLY cut taking a knife
away.  (Rules-wise, I'm thinking of the simple kludge that a knife attack
always does a point of damage, even if it misses.)  But there's a good
chance of losing blood to a nick in the hand or arm, even if you can grab
the guy's hands and isolate the weapon.

As for kicking it out of his hand... well, I've heard it's possible, but I
wouldn't try it.  If you miss, you're not in a very good position...
