The best resource for the eQUEST outputs is the Modeling Procedures Quick Reference listed under the Help -> Tutorials & Reference in the eQUEST interface.  It has a section on the graphical results reports.

In the Results View, at the bottom of the column on the left are 2 tabs - one lists the Projects\Runs that results are available for and the other, Reports, lists the default eQUEST preprogrammed results.  The annual energy by end use are pie graphs, the monthly are bar graphs.  There are also comparison reports which show multiple model results side-by-side.  Note that if you right-click on the table, you can copy it - and then paste the results into excel.

What I find more helpful is the csv file "ProjectName - Baseline Design_EG_MoEU_ED.csv" which is generated in the project directory for each simulation run.  It lists monthly end use for electricity and natural gas both energy and demand.  It is a fixed format so you can use it as a source in excel and graph the model results as desired using excel's graphing capability.
