To foot stomp the condenser note; the default performance curves seem to be extremely conservative compared to equipment available today.

Yes and yes.

There is indeed a heat pump type DHW heater in eQUEST.  Note that this is an air source heater with the condenser outside.  As such, the COP diminishes quite a bit from the rated value in colder climates.

If instead you have a water source heat pump with a relatively stable condenser temperature and COP, I tend to model with an electric DHW heater with an EIR of 1/COP.
