Forgive me if I misunderstand you. eQuest can certainly model a single room, a group of rooms, a whole building or, for those with deep pockets funding, an entire college campus with hundreds of buildings.
 
You certainly just model lab hood VAV within a single room or set of rooms.

I built a model using Energy Pro 5 but have found the program unable to model VAV fume hoods.
I would like to model only the Labs in the building using eQUEST.  
Does eQUEST allow one to model part of a building only? If so how would
I build the model?
